Abstract:

This study examines the thermodynamic behaviour of selected water-soluble vitamins as Vitamin C, Vitamin B1, and Vitamin B2 in different solvent media. The work focuses on how molecular structure, polarity, ionization behaviour, and functional groups influence solubility, hydration, and stability under varying temperature and solvent conditions. Thermodynamic parameters such as enthalpy change (ΔH), entropy change (ΔS), and Gibbs free energy change (ΔG) are interpreted through the van’t Hoff equation and dissolution principles. The comparative analysis indicates that Vitamin C shows high polarity and thermal sensitivity, thiamine exhibits strong solvent-mediated ionic interactions, and riboflavin displays lower solubility with pronounced pH-dependent behaviour.
